Fish itself is very healthy, and frying it can increase the amount of fat in your fish and negatively affect its ratio of omega-3 to omega-6 fatty acids. If you're frying, pan-fry rather than deep-fry your fish, and use healthy oil like olive oil. Fried fish is any fish or shellfish that has been prepared by frying. Often, the fish is covered in batter, egg and breadcrumbs, flour, or herbs and spices before being fried and served, often with a slice of lemon.
Seasoning and salting the fish too soon before cooking is a must for great flavor, but just as important is when you season. When seasoned too soon before cooking, the salt will start to break down the proteins in the salmon and draw moisture out of the fish.
